Low-Calorie Sushi Baked Recipe (4 Servings)

This sushi bake is only ~312 kcal per serving! It’s as satisfying as the real deal—low in carbs, low in calories, but still packed with protein to keep you fueled. Perfect for anyone watching their calorie intake but not willing to skimp on flavor or fullness. With this recipe, you don’t have to compromise; enjoy the rich, comforting taste of sushi in a healthier baked form that feels as good as it tastes!

Ingredients:

  • unchecked   1 cup mixed rice (200 kcal)
  • unchecked   2 cups cauliflower rice (100 kcal)
  • unchecked   1.5 to 2 cups water (adjust based on your texture preference)
  • unchecked   200g frozen salmon (400 kcal)
  • unchecked   Seasoning: 1 tsp onion powder, 1 tsp black pepper, 2 tsp salt, 2 tsp lemon juice
  • unchecked   6 shredded imitation crab sticks (160 kcal)
  • unchecked   ¼ cup light or low-fat mayonnaise (140 kcal)
  • unchecked   2 tbsp sriracha (50 kcal)
  • unchecked   1 tbsp sweetener or honey (0-64 kcal)
  • unchecked   2 tbsp soy sauce (12 kcal)
  • unchecked   1 tbsp sesame oil (120 kcal)

Garnish (optional)

  • unchecked   Cucumber slices
  • unchecked   Seaweed sheets

Instructions:

  • In a rice cooker, combine mixed rice, cauliflower rice, and water. Start the cooking process and wait until it’s perfectly fluffy.
  • Air fry the seasoned salmon at 400°F for 20 minutes or until fully cooked. Once done, shred it into small pieces.
  • In a bowl, mix the shredded salmon, imitation crab sticks, light mayonnaise, and sriracha until well combined.
  • Once your rice is cooked, season it with sweetener or honey, soy sauce, and sesame oil. Stir well to distribute the flavors evenly.
  • Preheat your oven to 400°F. In a baking dish, layer your seasoned rice followed by the salmon mayo mixture on top.
  • Place the dish in the oven and bake for 12-15 minutes until the top is slightly golden and bubbly.
  • Cool slightly and serve with cucumber slices and seaweed sheets. Wrap the sushi in seaweed and enjoy the flavors with each bite!
