Croissants are a timeless pastry, known for their buttery, flaky layers. But what if you could enjoy it with a unique twist? These croissants are crispy on the outside, chewy, mochi-like on the inside. Plus, they’re made with rice paper, which is naturally gluten-free!
Ingredients:
- 2 large eggs
- 1/4 cup cooking cream
- 2 tbsp sugar
- 2 tbsp melted butter
- ½ tsp vanilla extract (optional)
- 1 tsp baking soda
- 12 sheets of small-sized rice paper (approx. 15 cm in diameter)
- A pinch of sugar and salt for sprinkling
Instructions:
1. Prepare the Egg Mixture
In a medium-sized bowl, crack the two large eggs and whisk them until well beaten. Add 1/4 cup of cooking cream, 2 tablespoons of sugar, 1/2 teaspoon of vanilla extract (optional), 2 tablespoons of melted butter, and 1 teaspoon of baking soda. Whisk all the ingredients together until they are fully combined and the mixture is smooth.
2. Give the Rice Paper an Egg Bath
Pour the egg mixture into a shallow plate. For each mini croissant, you’ll need 4 sheets of rice paper. Dip each sheet into the egg mixture, ensuring they are well coated but not too soggy.
3. Layer and Cut the Rice Paper
Place the coated rice paper sheets on top of each other to create a stack. Using a sharp knife or kitchen scissors, cut the stack into three pieces like in the video.
4. Shape the Croissants
To form the croissants, place two strips vertically and one strip horizontally across them, creating a cross shape. Starting from one end, roll the strips into a tight spiral, shaping it into a croissant. The rice paper will have a slight elasticity, making it easy to form the classic croissant crescent shape.
5. Sprinkle and Air Fry
Once all your croissants are shaped, sprinkle a pinch of sugar and salt on top for a hint of sweet and savory flavor. Preheat your air fryer to 350°F (175°C) and cook the croissants for 10-12 minutes, or until they are golden brown and crispy.
Enjoy!
These mini rice paper croissants are best enjoyed fresh from the air fryer, when they’re still warm and crispy. Serve them with a cup of tea or coffee, or enjoy them on their own as a delightful snack.
Tips:
- For extra flavor: Try adding a small square of chocolate or a dollop of fruit jam inside each croissant before rolling them up.
- Storage: If you have any leftovers, store them in an airtight container. To reheat, pop them back in the air fryer for a few minutes to regain their crispiness.
These mini rice paper croissants are not only a creative twist on a classic pastry but also an easy and fun recipe that anyone can make. Give them a try, and enjoy the light, crispy texture and sweet flavor that make these croissants irresistible!
